Hello!! I was told I "never" post anymore. Mainly bc I didn't know anyone read this!
So...didn't make it to the wedding ! I was really bummed! However, I DID get to cook for my Pastor! It went really well ! I cant wait to have her over again! I made my mamas recipe of "zesty chicken and rice" and brownies! I recently was given a cake ball machine and love it! I used it last night and had wonderful cake balls to take to the ladies luncheon today ! Next time I'll get pics!
Work is going crazy , I'm training the management ! Most are quick learners and hard workers! Its interesting to be in a position to train the superiors , with training having an aspect of telling the trainee they are wrong and messing up.
I've never been one to speak up to authorities, It was drilled into me as a chid to just submit ... Even if I didn't wanna or I was in the right! ( oh, I've been punished for stuff I didn't do ... And not punished for stuff I should have been!)
It's interesting as I'm being trained in the Spiritual things, the Father put me in a earthly circumstance where I HAVE to speak out to these people and say "hey, no! That's not right! " Or " why did you do this that way?" " I showed you how to do this last week..."
I'm learning boldness and learning how to say things firmly yet nicely. Apparently , my tone has been a issue in the past. I've also learned so much about the Lords grace when I have to remind them that I answered their question the previous day!
How much more Grace does He give each one of us daily? We forget the answers are already in the 66 book love letter He wrote us! (Thanks, Lecrae for that line!)
I'm also learning that they need encouragement . Transition is hard… on everyone. Imagine being thrown into being In charge of a business ... And knowing nothing about it! Also reminding me to encourage my Pastors !
I'm trying to find balance right now in my budget, and time! Rest vs cleaning / rest vs social / etc! Thankful He provides direction and brings forth all truth!
Any way... Sorry for rambling, but hey! You have a post!

so....ask and you SHALL receive...I've been given the opportunities to learn 2 new styles of cooking in the near future!
A) my friend Christa is getting married! She's having a Kosher Jewish Potluck Reception...so,I've gotta research a Kosher dish I can make!...and what all that entails...I'm clueless beyond a very few basics!
B) my pastor ,whom I've been wanting to invite over for dinner since I moved into my new place, has recently gone to a Gluten-free lifestyle...so another chance to expand my horizons!
I'm excited to learn what these two very different culinary styles have to offer!
any ideas/tips/etc are welcome! any one do Gluten free or Kosher???!

Amish Friendship Bread

Amish Friendship Bread
Do not use any type of metal spoon or bowl for mixing. Do not refrigerate. If air gets into the bag, let it out. It is normal if the batter raises and bubbles and ferments.
Day 1 Do Nothing
Day 2 Mush the bag
Day 3 Mush the bag
Day 4 Mush the bag
Day 5 Mush the bag
Day 6 Add to the bag: 1 cup flour, 1 cup sugar, 1 cup milk, mush the bag
Day 7 Mush the bag
Day 8 Mush the bag
Day 9 Mush the bag
Mix and divide the bag (day 10 is also day 1)
Pour the entire contents of the bag into a non-metal bowl, add 1 ½ cup milk, 1 ½ cup flour, 1 ½ cup sugar. Mix together, then measure out separate batter of 1 cup each into 4 separate gallon baggies. Keep one starter for yourself and give 3 to your friends along with a copy of the recipe.
Pre-heat oven to 325˚. To the remaining batter in a bowl, add:
3 eggs
1 cup oil
2 tsp. cinnamon
1 large box of instant pudding mix
1 ½ tsp baking powder
½ tsp soda
1 cup sugar
2 cups flour
½ cup milk
½ tsp salt
Grease 2 loaf pans. In a separate bowl mix ½ cup brown sugar and 1 ½ tsp cinnamon. Dust the loaf pans with about half the mixture. Pour the batter into greased and dusted pans, sprinkle remaining sugar over the batter. Bake for 1 hour. Cool until bread loosens from the side of the pan (about 10 min). Turn out onto serving plate. Serve warm or cold.
The date ine above can e used to help keep track of the day you are on. If you keep a starter you will be baking every 10 days.

- 4 cups chicken broth, divided
- 1 medium onion, finely chopped
- 2 cloves garlic, finely chopped
- 1/8 tsp ground nutmeg
- 2 cups thinly sliced zucchini (3 medium)
- 2 medium ripe avocados
- 1/2 tsp kosher salt
- prepared pesto (optional)
In a large saucepan, heat 2 cups of the broth, the onion, garlic, and nutmeg. When it is boiling, reduce the heat to low, cover, and cook for 15 minutes. Stir occasionally. Add the remaining 2 cups broth and the zucchini and bring to a boil. Cover and reduce the heat to low. Cook for another 10 minutes, until the zucchini is limp but still bright green. Remove the lid and allow the soup to cool slightly. In a blender, puree the soup mixture with the avocado flesh in batches. Return the blended soup to the pan and warm on low, adding salt to taste. Stir in pesto to taste, if desired.

Add a fresh lime or lemon to your shopping list.
How to do it
Grab your shopping list and add a fresh lemon or lime to it. The next time you're at the grocery store, head to the produce section and look for ripe lemons and limes that are bright in color, firm, and heavy for their size. The ones with the thinner peels tend to be juicier. Later on, you can cook a meat or vegetable dish with lemon wedges instead of salt. Or add thin slices of lemon or lime to a pitcher of ice water for a refreshing drink. Fresh lemons and limes will keep in the refrigerator crisper for about four weeks, and you can freeze their juices.
Why it matters
Lemons and limes are powerhouses of vitamin C and other antioxidants, which research has shown to be associated with reducing inflammation and preventing heart disease. The tangy flavor of lemons and limes make a great salt substitute for people who are watching their salt intake. And a glass of sparkling water with lemon or lime slices is a delicious, zero-calorie, sugar-free drink.

i will use already bought "all natural" "pure" lemon juice to make lemon pepper chicken for lunch!! add some rice and mixed veggies...wonderful!

2 part post : February Reflections,March Expectations! 

- Fruits and veggies....I love em,but don't eat enough...also want more SPIRITUAL fruit! part of the month, I did a Daniel fast, which helped tremendously. Other part, I was lacking fruits.
- also don't exercise as much as I should...physically or spiritually....here's to that changing!did really great this month, except for the bit I was sick!
- very often neglected...(ME TIME) Limited hours at work= boredom = me time
- perhaps expand on my new introduction to bead work? :) got a refresher course! and learned to make earrings!!
- I'd LOVE to take a pottery class!!!!!need a steady job for $ for extras!
- perhaps I can find something to share on Etsy? See above
- I LOVE cooking. I want to do at LEAST 2 new recipes a month. (didn't do these two , but did do some other newbies, didn't post tho *sorry* tried a pizza mac dish that wasn't that great...tasted like spaghettio's,and then made a new recipe up....corn,cream cheese,and red pepper flakes...AMAZING. Just heat and drain corn VERY hot,stir in the cream cheese and pepper till the cream cheese is melted. )
- sports...those that know me well are laughing...hard. I want someone *anyone with the patience* to sit down and explain some of the terms/rules of football and basketball...so i'm not completely clueless...and I'd love to improve my tennis and golf and bowling games....and not through the Wii...hmm....nothing this month for this..except...I've made plans to attend a Super Bowl party....*what HAVE I got my self into?*(didn't go to the party)
- i want to expand my musical horizons... Concert on the 20th! (also,didn't go,but I have listened to and loved a few new musicians...check out my youtube or facebook!)
- I love books....2 a month (a goal i saw a friend have,sounds great to me. 1 "personal development" and 1 "for fun"...Think I'm gonna scratch this...permanently ... THE B-I-B-L-E,YES,THAT'S THE BOOK FOR ME!
- once a month...out of Branson (and Harrison and Springfield don't count.) hmm...no plans this month,yet!!!! (didn't get out of Harrison/Branson)
- staying organized is gonna help this year...WIP have a "system" I'm working on, need a few days to go through and purge/sort papers and closet and stuff.
- Planning my time wisely.WIP...daily. getting better with the help of http://www.sdiary.com/
- Tithing. more than the 10%....He's worthy of so much more! working on it! getting better!!!

I found THIS SITE. It is awesome/challenging. It offers a daily challenge based on a short quiz you take at the free sign-up.The quiz is based on healthy choices you make and happiness with life situations. The challenges are just that...challenges to push you beyond, expand your mind. This is something I love...being pushed,expanded,growing.learning.
I thought about doing it on paper,all journal like, but I prefer blogging... I'll get more feedback that way (HOPEFULLY!!!!!!!!) I'd LOVE to see others responses to this!

so,i'm a 'treadmill person'. I hate running/walking out side for exercise (hiking is different). I LOVE the treadmill.
I found this Couch to 5K running program...looks awesome!
I "started" the 9 week program today...with out much luck. It was not the program's fault. It was just a crappy workout day. Especially to start a new program.
- hadn't worked out since Friday. It's Wednesday! 'Nough said.
- wore different shoes...not the best idea.
- ate right before I worked out, and not a lot.
- Hadn't had any coffee ...yes,it makes a difference!

There are a lot of Christians who don't watch movies b/c they are "worldly". Yes,some can be. I agree. The Word says to guard your heart above all things,for it is the wellspring of Life!
However, The Father speaks to me through movies sometimes,if I'm open . Actually, anything. Even a secular song! (Yes,He's done it!).
I was really touched by this movie and saw a lot of parallels.Couldn't wait to share! *If you've seen the movie,read on , and ignore the out of orderness*
WARNING....MOVIE SPOILERS!!!!!!!
1. She didn't know she was a princess right off.
2.She was held captive by some one who wanted to keep her from that revelation (AND A CROWN!!!!),b/c it would bring her freedom,and b/c of their greed! She did this by deceit.
3. Her hair...her captor told her it was the most important thing,to protect it....how ever, even though it got her out of a few sticky situations,it was a hindrance...freedom didn't come until it was gone.
4.She saw the lanterns (lights)...and only dreamed of being there,in the midst of them. She knew there was more than what she was living. She knew they were the key. HE IS OUR LIGHT AND SALVATION!
5.She had to fight to secure her place. She knew it was worth it. She was realizing the truth!
6. She had a savior...who turned out to be her lover
7.The whole kingdom waited for their lost princess to return home. And rejoiced when she did! (Clouds of Witness,any one?)
8.She had to not be fearful to be herself when saving her and Eugene.
9.The chameleon...like the Holy Spirit....know one knew he was there but her (and eventually Eugene) and he helped her make decisions.
I'm sure there's more...but that's all for now...can't wait to watch it again!

What's your favorite kitchen gadget??Here's my top 5 in no particular order!
Electric Food Chopper....Makes everything easier!
Slow Cooker....so easy to be productive! Cooking,with out cooking!
My Drainer... It works for canned stuff,as well as tuna....absolutely LOVE this. Got addicted to it in College!
my Coco-Latte....Its simply amazing. You add a powdered mix (coca,cappuccino,cider,etc),flavorings (chocolate syrup,chocolate milk mix,what ever!),liquid (milk is my preferred,but you can do water!),plug it in,press the ON button,and let it go. It heats and mixes it perfectly. Then, when it stops mixing, you just flip the lever to dispense it into your cup! It also keeps it warm for a second helping and it has a "froth" option!
Programmable Coffee Pot not much to say about this one, except how wonderful it is getting up to coffee already made!That is...if you remember to set it the night before!

Had with Lemon Pepper chicken...would go great with fish or beef,also!

Ingredients
- 2 eggs
- 2 tablespoons milk
- 2 (14.75 ounce) cans creamed corn
- 2 tablespoons butter, diced
- 1 tablespoon all-purpose flour
- 1 tablespoon white sugar
- 1/2 teaspoon black pepper
- 1/2 teaspoon celery salt
- 1/2 teaspoon onion powder
- 1/4 teaspoon garlic powder
Directions
- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl beat eggs with milk. Blend in the corn and butter. Stir in flour, sugar, black pepper, celery salt, onion powder and garlic powder. Transfer to a glass pie plate.
- Bake in preheated oven for 45 minutes to 1 hour, or until top is golden and bubbly.
- Allow to cool for 10 minutes before serving.
Had with Lemon Pepper chicken...would go great with fish or beef,also!

Recipie Review

Campbell's Creamy Chicken Broccoli Noodles Recipe - Food.com - 257963
I substituted the mushroom soup for 2 cans of cheddar cheese soup, omitted the milk, and used frozen broccoli ,and added onion.
I cooked and drained the ramen, added the soup,broccoli,seasoning packets,chicken and onion. I cooked everything in one pot,stove top.
Turned out great,although with my pans,I had to stay with it ,constantly stirring after I added everything until it was heated through
...next time,I think I'll add black pepper,and possibly garlic powder... and not cut the chicken into such little pieces!
possibly look into shredded cheese instead of cheddar cheese soup...cheaper! I will need to still use the "cream of" soup!
Over all,a great recipe, def a new favorite.
